How to Make Butter Stuffed Chicken Breast:
- Step 2:Chicken breasts should be split in half lengthwise, with both parts remaining the same size and thickness. Then, create a pocket in each chicken breast by cutting a slit as broad as possible without cutting through the chicken breast, which should be around 2″ wide by 3″ long.
- Step 3:Then, each chicken pocket should have 1 tablespoon of the butter filling; after sealing the bags, push the butter over the top of the chicken breast to distribute it. After that, sprinkle salt and pepper on both sides of the chicken breasts after pinching the opening shut.
- Step 4:3 plates should be set up for breading. Pour 1/2 cup flour into the first plate. Then, beat 2 eggs together in the second big bowl & pour two cups of panko crumbs into the third big bowl. After that, dip stuffed Chicken in beaten egg, allowing excess to drip back into the bowl after being dredged in flour and shaken free of mess. Finally, coat the Chicken well by dipping it into the bread crumbs. A breaded chicken is placed on a big plate or baking sheet.
- Step 5:After that, add 1/4″ mild olive oil to a big, deep, heavy-bottomed skillet or Dutch oven and heat over medium heat. To prevent overcrowding, add the breaded Chicken to the hot oil in two batches once it reaches 350 F or begins to sizzle when a bread crumb is added. Sauté the Chicken for 4 minutes on each side before carefully rotating it with a spatula. Then, place the cooked Chicken on a platter covered with paper towels.
- Step 6:Serve with lemon wedges so guests can squeeze fresh lemon juice over the Chicken before garnishing with freshly cut parsley.
